Marinades
 

All purpose marinade
3 cups dry white wine
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper or to taste
1/2 cup soy sauce
                        Mix all ingredients together. Marinate the meat (beef, pork, chicken,
                    or game) for 3 to 6 hours, then use the marinade as a basting sauce
            as the meat cooks on the grill.

Apple soy marinade
2 1/2 cups apple juice
1/4 cup vegetable oil
2 garlic cloves, minced
1/2 teaspoon ginger
1/2 cup soy sauce
3 bay leaves
1 large onion, chopped
1/4 teaspoon pepper
                Combine, add meat and chill 12 to 24 hours before cooking. Makes
            enough for 4-5 pound roast or brisket.

Citrus and Sherry marinade
1/2 cup orange juice
2 tablespoons dry sherry
1 green onion, chopped
1/8 teaspoon ginger
1/4 cup soy sauce
1 tablespoon vegetable oil
1 teaspoon chopped garlic
Combine all ingredients.
 

Lemon pepper marinade
1/4 cup lemon juice
1 tabalespoon vegetable oil
1/2 teaspoon cracked black pepper
1/4 cup water
1/2 teaspoon fresh dill
1/2 teaspoon salt
Combine all ingredients.
 

Spicy marinade for shrimp
1 cup rice vinegar
1/2 cup olive oil
1/2 teaspoon salt
24 large shrimp, cleaned and deveined
1/4 cup lime juice
2 tablespoons cilantro leaves, chopped
1 teaspoon sesame oil
1 teaspoon red chili paste
 
                    Combine all ingredients and marinate shrimp for 30 minutes. Thread 3
                        shrimp onto a water-soaked bamboo skewer and grill 2 to 3 minutes per
side.
